A whole, roasted chicken is my go-to meal. I’ll roast it in a Dutch oven with veggies and cubes of bread for a one-pot meal (that bread with the fat drippings will make you drool, guaranteed), or toss it on the grill, or I’ll put it in my counter-top rotisserie for super crispy, finger-licking-worthy skin (if you don’t have a countertop rotisserie, I highly recommend adding one to your life!). I love that it can feed a group or offer lots of leftovers for the week. So simple. So delicious. - Aubrey
