You're probably thinking the same thing I did when I first saw bone-in chicken breasts: “What the heck?” But I swear, once you try them, those flimsy, generic chicken breasts you used to get at the store will be a bygone of a different time and a different you. These are juicier and more flavorful than their boneless, skinless counterpart, and just as easy to cook up. The biggest difference I've noticed with keeping the skin and bone in tact is that these stay beautifully juicy and tender, even if you accidentally overcook them. No dry chicken here! Plus, pastured chickens get lots of exercise and a really diverse, healthy diet, so the skin is not fatty—it’s lean and crispy. And I love saving the bones for broth!

Orders are available for pickup most Tuesday, from 4-6pm, here at the farm in West Richland, WA.
